This is my absolute favorite banana bread recipe from one of my favorite cookbooks, Canyon Ranch Cooks (www.canyonranch.com).
Ingredients:
3 small, very ripe bananas mashed – about 1 cup
1/4 cup brewed coffee
1 tsp grated orange peel
1/2 cup sugar
1/4 cup brown sugar
1/4 cup unsweetened applesauce
1 whole egg
1 cup whole-wheat flour
1/4 cup bread flour
3/4 tsp baking soda
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp ground allspice
1/3 cup chopped walnuts
1. Preheat oven to 350 degrees. Lightly coat an 8 1/2 x 4 1/2 x 2 1/2 bread pan with canola oil and dust with flour.
2. In a small bowl, combine bananas, coffee and orange peel and mix well. Set aside.
3. In a medium bowl, mix sugar, brown sugar and applesauce. Add egg and mix well. Add to banana mixture and mix until smooth.
4. In a small bowl, sift together dry ingredients. Add to banana mixture and mix until all ingredients are just combined. Fold in walnuts. Pour into prepared pan and bake for 1 hour or until toothpick inserted in center comes out clean. Remove from oven and let cool on a rack for 5 minutes. Remove from pan and slice when cooled completely.
Makes 12 servings. Each serving contains approximately: 135 calories, 27 grams carb, 2 grams fat, 18 mg cholesterol, 3 grams protein, 146 mg sodium, 2 grams fiber
